Not long ago, Maison Martell hosted an exclusive, closed-door session with one of the most intriguing figures in contemporary cocktail culture, Martell’s Master Mixologist, Rémy Savage — a regular fixture in the World’s 50 Best Bars list. Renowned for infusing philosophy and art into mixology, Savage shared his avant-garde approach with an intimate circle of media and industry guests, exploring how ideas, flavours, and craftsmanship intertwine.

He spoke about the harmony between aroma and taste—the equation that creates flavour—and how understanding that balance is key to crafting cocktails that truly connect the senses.

Putting philosophy into practice, Savage showcased how balance begins with simplicity — starting with Fine à l’Eau, his contemporary take on a classic cognac and water serve.

Crafted entirely from grape-derived ingredients, it stays true to its roots while expressing Martell’s forward spirit. Elegant yet deceptively simple, Fine à l’Eau reveals how clarity and flavour coexist; a light, revitalizing serve that bridges the Maison’s heritage with contemporary craftsmanship.

Guest Shift with Jon Lee at Lavantha
Later that night, Rémy Savage joined Jon Lee, the award-winning bartender and co-founder of Penrose and Lavantha, for a guest shift that showcased Martell’s creative spirit behind the bar. Savage presented his bold reinterpretation of the Espresso Martini with Martell Noblige, while Lee introduced two of his own creations — Poire Belle and Bloomfield — each highlighting Martell’s depth and versatility. Together, they reflected how the Maison’s cognacs continue to inspire innovation in every pour.
