Meet & Greet Session with the MasterChef Australia Contestant - Amina El Shafei

Before the month of July ended, I was invited to the Meet & Greet' Session with the MasterChef Australia Contestant - Amina El Shafei at Blu Med Ristorante e Bar. Before the meet and greet session, Amina was at the Mid Valley center court doing a stage demo. If you have seen my earlier blog post about my marketing session experience with Amina, you probably have a clue on what she was cooking at the demo. You can read about it here.



Well, if you couldn't find it in my previous blog post, then let me tell you here. It's fried rice with chicken and prawns!


The moment I reached Center Court, it was already filled with a bunch of crowd non other than Amina's fans.



It's good to watch how Amina cook and interact with the crowd at the same time but what I observed is that she is a really friendly person. She can even talk the video camera man who was doing close up shoot at her.



Before the stage demo ended, I rushed off to Blu Med for the meet & greet session which is just right opposite the mall.



I registered at the counter and filled up my stomach with a good dinner which was provided by Blu Med before Amina comes back to this meet & greet session.



I can see that Amina was a little tired and sweaty from the stage demo earlier on but she was still all bubbly and trying her best to entertain us.



In this meet & greet session, she has prepared a short master class on dessert, which was the Steamed Pandan Cakes with Lychee, Rambutan & Longan in Syrup.



The baking process was quite fast and simple as long as you have the ingredients and the right tool for it. She requested a volunteer from the members of media to help her scoop out the pandan cake out from the chinese tea cups. After it was done, everyone get a piece of the pandan cake, we mingled and got signature from Amina. I have included the recipe and also the cooking method below if you like to try to bake it yourself at home.

Steamed Pandan Cakes with Lychee, Rambutan & Longan in Syrup
Ingredients:-
4 lychees, rambutans and longans each, skins removed, deseeded and quartered.
1/2 cup of sugar
1 tbs of water

Steamed cake batter
1/2 cup flour, sifter
1 tsp baking powder
1 egg
2 tbs milk
2 tbs sugar
1 tbs vegetable oil
1 1/2 tsp pandan extract

Cooking instruction:-
1. Start by making compote from the fruits.
2. Combine the fruits, sugar and water in a pan.
3. Bring to the boil and allow to gently simmer for 10mins.
4. Remove from heat to cool. Leave aside.
5. Combine flour and baking powder together in a bowl.
6. In a separate bowl add remaining ingredients and mix well.
7. In a large pan, fill water to half way, cover with a tight fitting lid and bring to the boil on high heat.
8. Once boiling, reduce temperature to a gentle simmer leaving the lid on.
9. Prepare four tea cups generously sprayed or lightly greased with vegetable oil.
10. Whisk wet ingredients with dry until smooth and well combined.
11. Gently pour batter into the four tea cups and place inside the steaming pan.
12. Place a towel tightly under the lid to absorb produce steam (so it does not affect the cakes) and steam for 6-8 minutes.
13. Test with a metal skewer in the center of the cake (you can use a fork).
14. Once done remove cakes from the pan and the cups and flip upside down on individual plates.
15. Gently spoon the fruits around the cakes and drizzle some of the syrup on the cake.
16. Serve while warm.
